A fat free diet

So this last Christmas Eve, I was diagnosed with having gall stones. I spent all day in the E.R. What a day. I keep saying , some people get coal for Christmas, but I got gall stones. I must have been really naughty this year? Needless to say , the past month has been a living hell. I am having surgery tomorrow to have my gall bladder taken out, and quite frankly, I can't wait. How sad is that? I can't wait to have a surgery, where they hack out a body part and throw it in the trash.

Anyway, so they told me not to eat fat and sent me home with a super pain killer. Um, o.k. Kinda vague but whatever. So Christmas day I went to Safeway, to try and find something I could eat. LOL, there isn't much. I bought applesauce, jello, fat free chocolate milk, and some turkey. I went home and ate some turkey and chocolate milk. Much to my dismay, I had another attack. WTF? Apparently chocolate is on the no-no list too. Why didn't they tell me? ERGH! So Christmas day was miserable too.

But that was just the beginning of my nightmare. I have gone to the Dr.s office three times, to the E.R. twice and had to get refills on the pain meds after I ran out on a weekend. I hate taking the pills, they make me loopy and sleepy. So doing my homework has been real interesting. I will probably have to review everything I did the last couple of weeks, since I won't remember it!

I tried to get in to have surgery before school started, you would think 2 weeks would be enough time. But no almost a month to the day later, I get the surgery. Life goes on for everyone else, except me. Everyday I am in pain. I eat, I hurt, I don't eat, I hurt. I can't win. I made the mistake of trying to go without my pain meds, that won't happen again.

So out of desperation I got creative with my cooking. Gluten free, fat free is quite a challenge, if you want it to have any taste what so ever. But I did manage to come up with a few staples for dinner. Here is one of them.

Gluten free / fat free mozarella chicken with spaghetti.

GF spaghetti noodles.
1 jar of garlic spaghetti sauce.
chicken breasts.
GF bread crumbs.
Fat free mozzarella
2 eggs

I beat the eggs in a bowl, dipped the chicken in it, then coated the chicken with the GF bread crumbs. I then put it in a non-stick pan. I covered the breaded chicken with spaghetti sauce and sprinkled the fat free mozzarella on top.
Bake in the oven at 450 degrees for 20-30 minutes. Until the mozzarella is browned and bubbly.

I cooked the spaghetti noodles with just boiling water and salt.
I then topped the noodles with just the plain sauce, no meat added to it.

Surprisingly it was rather tasty, and it didn't make my gallbladder mad.
